Seven planets rule the twelve signs of the Vedic zodiac. The table below, drawn from Brihat Parashara Hora Shastra (BPHS) chapter 4, is the standard answer.
How to read the sign lord table
BPHS (Brihat Parashara Hora Shastra, R. Santhanam's translation) lists the rulerships in chapter 4, and P.V.R. Narasimha Rao (PVR), author of Vedic Astrology: An Integrated Approach, gives the same pairings in his Table 6.
